Ingredients for Curried Cod:
1lb Cod loins or Cod cheeks.
1 Cup of Curry Massalla Gravy.
Quarter of an onion finely chopped.
3 Teaspoons of Curry Powder.
1 Teaspoon of Chilli Powder.
1 Finely Chopped Green Finger Chilli.
4 Teaspoons of Garlic Puree.
2 Teaspoons of Ginger Puree.
5 Tablespoons of Vegetable Oil.
4 Tablespoons of roughly chopped coriander leaves.
1 Tablespoon of whole coriander leaves.
1 teaspoon of Garam Massalla.
Create a paste using the curry and chilli powder with a small amount of water.
Add a little vegetable oil to a pan and fry the onion until translucent.
Add the garlic, ginger and chilli.
Stir fry on a medium heat for a further five minutes.
Add the paste to the dish and fry for a further 30 secs.
Add the cod and fry for one minute on each side.
Add half a cup of the Massalla Gravy and simmer for five minutes, stirring continuously.
Add some finely shopped coriander leaves to taste, and serve curry.
